Full disclosure, I am making this because I stumbled upon a video  called “Tamal Pie” but It was a disgrace. The recipe barely passed as a texmex caserole but in no way did it have the aspects of a tamal or was even worthy of having the tamal name stamped on it. Therefore, here is a real tamal pie or as we call it en mi pueblo Tamal de Cazuela.  I hope you enjoy!


  • 2 cups of Maseca flour ( its also gluten free!)
  • 1 1/3 cups of chicken/vegetable broth
  • 1 tsp of baking powder (like Royal)
  • 1 tsp of salt
  • 2/3 manteca or vegetable shortening.


Mix flour , baking powder, and salt in a bowl. Add the broth and mix thoroughly with your hands to make a soft-moist dough.In another bowl mix the manteca/shortning until light and fluffy. the add the flour mixture and continue mixing until it becomes smooth and slightly sticky.




This actually comes out yummier with pork but I already had chicken thawing. You can even use veggies instead for a vegan treat.

Here what you’ll need:

  • 2 cups of shredded chicken or pork
  • 6 dried pasilla chilies
  • half an onion
  • 2 garlic cloves
  • 1 teaspoon if cumin
  • 2 teaspoons of broth
  • a pinch of salt


Open up and remove the seeds from the pasilla. then boil them until skin has soften. once softened you will blend them or use a food processor until a thick red paste is formed.


Proceed to dice your onion and garlic and combine them in a separate bowl with  cumin,salt, broth and the pasilla paste. Mix in with your shredded chicken until its  covered generously. It might look like a small amount of paste at first but trust me it is enough.


If you’re familiar with  making tamales this will be easy as instead of placing them in a banana leaf or corn tusk we will just be placing the mixture on a oven safe dish . I am using a large casserole dish as I have a family of 6 to feed  and have doubled the masa/ingredient amount but you can always use a skillet or a pie dish which will be perfect for the measuring above.

I’ve opted to line my dish with banana leaves that I’ve softened in hot water because i love the taste it adds on to the masa but you don’t have to do this.

For the first layer you will need to scoop in half of your masa and spread it evenly on the dish. second layer, you will add all your chicken mix  and spread evenly on top of the first layer of masa. then repeat the first step, but on top of the chicken mix to cover it all like a pie top.


Preheat your oven 375 degrees. If your using a a glass dish you will need to do a water bath and cover it will aluminum so it can bake thoroughly.


To prepare a water bath, put your filled pan in a larger pan and add enough boiling-hot water to reach halfway up the side of the smaller pan. this will help to add moisture into your dish.

Baking time will be 1.5 to 2 hrs. Check often to make sure the middle of your dish is cooked thoroughly.

My whole house smelled like the holidays which was amazeeeee. It’s never too early to treat yourself! We made some delicious red salsa to dress our slices and give it that extra kick. it was just divine.
